Located in the quaint beach town on Edisto Island, SC The Briny Swine has a very unassuming front facade. Don’t let it trick you, as this restaurant is churning out some SERIOUSLY tasty food. Housed above a watersport & tackle shop, the fresh catch is literally at the backdoor.
Drink(s) : Coconut Orange Concoction
Living on island time? If so, this drink is for you. Our party sat down and quickly ordered a bottle of wine to enjoy with our oysters yet little did we know, there was a better choice to indulge in. After a quick taste test, their frozen Coconut Orange Concoction was a crowd favorite (literally every person at our table ordered one). Oh but wait, there is more… they also have a froze (frozen rose) slushy that you can enjoy -OR- mix with the other and really take your vacation up a notch. Just trust us, and thank us later.
Appetizer(s) : Raw Oysters
In true fashion, the Funderburks are always down for some good oysters. As soon as Matt uncovered there was an Oyster bar on the island, the motive quickly became ‘how soon’ can we get there. At first attempt we caught them closed in between the lunch and dinner shift. Not to worry, we showed up the next day and enjoyed a dozen of fresh, raw oysters; half of which were caught locally on the northern and southern parts of Edisto Island.
Entree(s) : Shrimp Roll & Potato Salad
There is nothing better than freshly caught and prepared seafood. Their local shrimp was tossed in a creamy mayonnaise and lemon oil mixture and placed on top of a soft open faced bun. Tying all ingredients together they used delicious bread n butter pickles, pickled celery and green scallions. As with any sandwich, you have your choice of a side. I can assure you their homemade potato salad did not disappoint.
Dessert(s) : Banana Pudding
This might have been THE very best banana pudding I have ever had; being a Southern girl that is saying a lot. Every single bite was heavenly. This dessert was perfectly balanced with freshly cut slices of banana bound with just the right amount of pudding mixture. (In my opinion, this ratio is where many versions go awry). On top you’ll find fresh whip cream and crushed vanilla waffers to complete and balance this popular dessert choice.
The atmosphere :
As you walk up the exterior stairs, you begin wondering ‘what’ is the restaurant going to look like? As soon as you step foot inside you quickly realize this Smokehouse & Oyster Bar is a hidden gem. You’re initially greeted by a traditional wrap around bar with additional restaurant seating behind. Including a mixture of hightops, tables, and booths you are guaranteed beautiful views of the Intercostal waterway.
