Ingredients :

Protein

  • 24 Prepared Chicken Wings
      • You can purchase the full wing together, but it will require a meat cleaver and extra muscle to break them down by hand. 

Produce

  • 1  Lemon
  • 3/4 cup of Cilantro for garnish 

Dairy

  • 2 Sticks of butter 
  • 1-2 pinches of Shredded parmesan cheese

Baking & Spices

  • Salt & Pepper to taste

Other

  • 2 tbsps of minced Garlic
  • 1/2 bottle of Sweet Baby Rays Buffalo Sauce


Kitchen Tools/Appliances (optional)

  • Air Fryer (not brand specific)
  • Silicone basting brush 
  • Meat Cleaver (optional)

Preparation :

  • Open packaging to raw chicken wings
      • Optional, if necessary use meat cleaver to break down the full wing into 2 parts
  • Quarter lemons for juicing purposes
  • Chop cilantro for garnish

Directions :

  • Step 1 : Saute 1 stick of butter and 2 tbsps of garlic in a pan for 2 minutes. After, melt an additional stick of butter in the same pan.  
  • Step 2 :  Baste the raw chicken wings by taking a basting brush, dipping it in the melted butter and coating all sides of the wing. Repeat this process until all wings have been coated in a generous amount of the butter mixture.
  • Step 3 : Turn on the Air Fryer and preheat to 400 degrees.
      • The air fryer will prompt you as to when to place the food inside of the bottom tray. 
  • Step 4 : To fry the wings place the raw basted chicken wings into the base of the air fryer (on top of the grate) in a single row (try not to stack many wings ontop of another). Cook the wings for 10 minutes each side.
      • After 10 minutes, open the base of the air fryer and take a pair of tongs to flip/rotate the chicken wings so that the uncooked side is now facing up. Repeat this step once more so that the wings have been cooked for a total of 20 minutes (10 minutes per side)
      • Once both sides of the chicken wings have been fried (they should appear golden brown or crispy), remove the chicken wings and place them in a medium to large sized bowl to be used in a later step (see step 7). 
      • Based on how many wings you are preparing, you might have to repeat this step several times until all wings have been fried.
  • Step 5 : Reheat the butter mixture, over medium to high heat to ensure the ingredients and utensils that were cross contaminated during Step 2 (during basting) will be safe to use and consume. 
  • Step 6 : Complete the Buffalo sauce by adding half of the bottle of Sweet Baby Rays Buffalo sauce to the butter mixture. Stir occasionally for 3 minutes or until bubbling.  
  • Step 7 : Pour the sauce over the fried chicken wings and toss in the medium sized bowl until all sides of the fried wings appear to be coated. Then, squeeze or juice (equivalent of 1/2 of) the lemon. Add chopped cilantro. Add desired amount of shredded cheese. Salt & pepper to taste and toss all ingredients again. 
  • Serve : Plate tossed buffalo wings and enjoy! You can always top with additional shredded parmesan cheese and/or cilantro for personal preference.
      • Optional, if you want to emphasize the lemon flavor, you can zest a tiny amount of the lemon peel over top of the wings. Just remember, a little goes a long way.
